Overview

The safety and authenticity of the food we eat and the hygiene of food premises that prepare and serve food are of paramount importance. This is reflected in the work of the government agencies, regulatory bodies and local councils that have responsibility for monitoring and enforcing food safety standards.

Individual food producers, suppliers and catering outlets also require appropriate knowledge and understanding of the legal requirements and their responsibilities to the communities they serve.

The Certificate of Higher Education (CertHE) in Food Control has been designed for those who wish to become Food Safety Inspectors or Auditors by covering the academic requirements of the Chartered Institute of Environmental Health’s (CIEH) Higher Certificate in Food Control (HCFC) qualification. Entry on to the course is available for those who have experience of working in the food industry or have sponsorship or employment within a Local Government Environmental Health Department. The academic content of the HCFC must be supplemented with a practical logbook prepared during a minimum of 6 months practical training, plus a professional interview for competency with the CIEH. Although the university does not provide the placement position for the experiential logbook requirement, the University's Employability Support Team will assist where possible, in supporting students in contacting local authorities and in applications for placements.

This course is currently accredited until July 2020 by the Chartered Institute for Environmental Health (CIEH) to deliver the academic content of the CIEH Higher Certificate in Food Control (HCFC) the baseline qualification for food hygiene and standards, official controls and the inspection of food premises within the UK. 

The University’s accreditation with CIEH shall be up for renewal in July 2020. Whilst the university hopes and anticipates that any renewal would be successful, if the renewal were to be unsuccessful, this course would no longer be accredited and we would notify applicants and students as soon as possible.

As the course is accredited by the CIEH, you will be entitled to apply for Affiliate Membership of the CIEH. Additional costs are payable to the CIEH for Membership.

Eligibility for full membership of the CIEH however is only possible upon successful completion of the Higher Certificate in Food Control (HCFC) academic content (which is covered in this course), professional log book and professional interview.

Course information

This course is designed to meet statutory requirements for Food Inspectors. We will therefore teach you how to identify and assess food safety risks, advise on appropriate risk controls, inspect food and food premises for compliance and understand how to apply and enforce the appropriate food safety legislation.

Alongside the academic content relating to the Higher Certificate in Food Control (HCFC), the course also aims to develop your transferable skills in accessing, evaluating and reporting scientific information, decision making, team work, entrepreneurship and in communicating in diverse situations, thus preparing you for future careers in food safety, inspection and control.

The CertHE in Food Control is available over 1 year full time (3 semesters) or 2 years part time (5 semesters).

There are 7 modules (120 credits) that make up the CertHE in Food Control and these modules teach and assess the academic curriculum for the Chartered Institute for Environmental Health’s Higher Certificate in Food Control. These Modules are taught as part of the BSc Food Safety, Inspection & Control degree programme and classes will be combined. You will also supported by an additional bespoke skills module and online learning materials that ensure that you are suitably supported for academic study. All modules within the course are mandatory.

The course itself is taught by a mixture of lectures, laboratories, kitchen based sessions and interactive workshops and discussion groups. Real life scenarios and current and recent case studies involving food quality and safety issues are used extensively. As part of the assessments within the course, you will have opportunities to undertake practical inspections of food and food premises and to prepare and present a court prosecution case along with other real life application of key skills and knowledge such as Hazard Analysis and Critical Control Points, assessing microbiological food sampling results and applying current food safety legislation. These applied assessments are also supported by traditional written assignments and examinations.

Outside of the classroom, you are further supported by online course materials which you are expected to complete in your own time.  The course team includes practitioners in food and food premises inspection who bring their knowledge and professional experience to the classroom. Thus, the course aims to produce competent people who are ready to further their careers within the food industry, especially with regulatory bodies as food safety inspectors.  The course also offers the opportunity for practical industry visits and fieldtrips such as visits to food manufacturers (subject to additional costs and availability).

Seminars by our practitioner staff and visiting lecturers will bring you the latest on a wide range of food safety based research topics, such as a food safety packaging seminar from food manufacturers and Local Authority inspectors.

This course will be assessed using a variety of methods which will could vary depending upon the module. Assessment methods include formal examinations, coursework, group reports and presentations. This course is predominantly assessed by coursework.

The Coventry University Group assessment strategy ensures that our courses are fairly assessed and allows us to monitor student progression towards the achieving the intended learning outcomes. Assessments may include exams, individual assignments or group work elements.

On successful completion you will be able to:

  • Apply both theoretical and practical scientific concepts in food science, technology, food safety management, microbiology, food standards and food inspection and food law to analyse food related risks to human health and to develop creative solutions that ensure the protection of public health in the food chain.
  • Integrate theory and practice by the practical inspection of food and food premises, applying current national and international food hygiene and standards legislation.
  • Demonstrate knowledge meeting the academic requirements of the CIEH syllabus for the Higher Certificate in Food Control (HCFC).
  • Evaluate information to develop reasoned and balanced arguments pertaining to food safety and control issues, and communicate ideas effectively in written, verbal and digital formats. 
  • Work effectively within a team, demonstrate leadership and team management skills and communicate effectively with a diverse range of individuals and organisations.
  • Demonstrate knowledge and skills, including appropriate professional conduct, to enhance employment opportunities in local government or private sector auditing/certification or food safety training/consultation.

In a typical teaching week, you will have up to 15 ‘contact’ hours of teaching. This generally breaks down as:

  • Personal tutorial/small group teaching: 6 hours of workshops each week.
  • Medium group teaching: 3 hours of laboratory work each week
  • Large group teaching: 6 hours of lectures each week.

In addition, you will be expected to undertake a further 24 hours of self-directed study each week eg. working on coursework assignments.

Five GCSEs graded 9-4 / A*- C including Mathematics, English Language and Science, or specified equivalents, and:

  • Suitable experience and background from working within the food industry and/or employment and sponsorship from a local authority.

EU nationals must have resided in the European Economic Area (EEA) or Switzerland for the three years prior to the start of their course. The purpose of that three year residency should not have been mainly for the purpose of receiving full time education.

Graduate Immigration Route visa – Based on current information from the UK Government, students whose study extends beyond summer 2021 may be eligible for a visa under the UK Government’s Graduate Immigration Route, which will enable students to stay and work, or look for work, in the UK at any skill level for up to two (2) years.
